Our story

Our journey began in 2011, when my dad and I tapped our very first trees and savored our first drops of maple syrup. What started with just five trees has grown steadily over the years into a thriving operation with over 2,000 trees. We now tap trees on three local properties, as well as our own backyard, turning a simple family hobby into a full-fledged business. Today, Bryson's Maple Syrup proudly shares the fruits of our craft right here in our hometown of Monson, Massachusetts.

Our maple season may start in early spring, but preparation takes place year-round. Each late fall, we install new tubing and lines to the trees, so that when sugaring season arrives, we can go out into the woods and tap each tree by hand. This careful, hands-on process takes several weeks, ensuring every tree is ready to produce the highest-quality syrup when the season begins.

Sugaring season lasts about 6–8 weeks, typically running from mid-February to late March, depending on the weather. The sap flows best when cold nights dip below freezing and warm days rise above it. Once our tanks have gathered enough sap, we pump it to our sugarhouse located right in our backyard. There, it’s pumped into holding tanks before being processed in our wood-fired evaporator, which carefully removes the water until only pure maple syrup remains.

After evaporation, we check the syrup’s density and filter it to ensure the final product is pure and high-quality. As the season progresses, we produce different grades of syrup—from light to amber to dark—each with its own unique flavor. Once complete, the syrup is transferred into bottles, ready to share the taste of our season with our community.

We also take our syrup one step further by creating a variety of infused flavors. Our most popular is coffee-infused maple syrup, but we also craft cinnamon, hot cinnamon, hot pepper, and bourbon barrel–aged syrups.

Each year, we continue to expand our operations—tapping more trees, experimenting with new flavors, and sharing even more ways for people to enjoy the unique taste of Bryson’s Maple Syrup.
